Protein- rich based bread launched

Protein Concentrate is elaborated from giant squid in Peru by Matrel Foods SAC Company.

This bread is made with PROTEINOL, giant squid flour for the human consumption, but you can’t tell. You probably tried it already and couldn’t figure it out. This is because it smells and tastes just like any other bread. However, its nourishing benefits make it become an ideal product to complement a good daily diet.
“Pure as it comes, the giant squid flour is very difficult to use because it has a very concentrated flavor. We’ve been able to remove the characteristic flavor and smell. It was a difficult job because it had to be done without the material losing its qualities”, said Carace Saravia, chief of investigation and development in Fleischmann-ABMauri Group, company that was interested in the project for the use of Proteinol in a pre-mix that allows to make bread and any other breading product with a high protein content.
BENEFFITSCompared to other breads, the caloric content doesn’t vary; however, the bread elaborated with PROTEINOL has 25% more proteins than the common bread. “While regular bread has between 6% and 7% proteins, this bread concentrates 12%. It has calcium, and more importantly, almost 21% iron, which makes it a very important food to battle anemia, compared to other breads that only have 6%”, says the nutritionist Adriana Carulla. According to Saravia, all the necessary tests to guarantee the quality of the product were performed. And if you’re allergic, don’t worry, nothing will happen to you.
She adds that this is the only marine-origin flour bread in the world and that many countries are interested in acquiring the marine protein concentrate, Proteinol. She said that the goal of the company is to reach all bread in all socio-economic sectors, and make it become the perfect complement for good nourishment.
This bread made with giant squid flour is not much more expensive than the other bread, and it’s already been commercialized in Lima since a few weeks ago. In two important supermarket chains it is sold with the name of Protipan. You probably tried it already and couldn’t figure it out.

From the nutritional point of view, wheat flour bread in general doesn’t bring the quality and amount of necessary proteins to elevate the nutritional value of our population’s diet. However, the biologic value of the wheat protein can be incremented through the addition of its first lacking amino acid, lysine, or trough the complementation of high biologic value food or of an isolated protein, like the giant squid one, without altering its organoleptic characteristics and its acceptability. The evidences indicate that it is feasible to increment the nutritional value of wheat flour with protein concentrates of animal origin.
One of the advantages of this practice is the increase of the protein concentration in the supplement food, making it possible to be used more efficiently by the organism. The disadvantage, if such can be called that way, lays in the fact that the preparation of this bread has to be on industrial scale to improve the nutritional state of an entire population; otherwise it wouldn’t have the desired success if made in individual way.
